Vegan breakfast can be so tasty and easy: You only need these ingredients

Healthy and quick, this vegan breakfast recipe from Luna Création will help you fuel up for the day. And the best part? It can be prepared the day before and only takes three minutes to gather the groceries in the morning. The key ingredient in this recipe, persimmon, is an antioxidant bomb that fights free radicals to slow down premature skin aging. Bananas are also included to replenish magnesium levels and prevent temporary fatigue. But also a large portion of almonds and almond milk to provide the body with 1. antioxidant vitamin E, 2. vitamin B1 to strengthen the skin barrier and 3. linoleic acid to prevent dryness of the skin. So the perfect recipe for a vegan breakfast in the winter months when our skin is dry and tight.

Ingredients for the cream:

  • 125 g of persimmons
  • 1 banana
  • 125 ml almond milk

Ingredients for the granola:

  • 420 grams of almonds
  • 180 g grated coconut
  • 1 pinch of cinnamon
  • 300 g Medjool dates
  • 190g cranberries
  • 80 g of coconut oil

Another time saver: the prepared granola can be stored airtight for up to a month

For the cream, put all the ingredients in a blender and blend until smooth. Put them aside.
For the granola, place the almonds, coconut and cinnamon in a blender. Then mix for a few seconds. The almonds should be slightly crushed.
Then add the dates, cranberries and coconut oil and mix again.
When the mixture is homogeneous and grainy, put it on a baking sheet.
Bake in the oven at 180 °C for about 15 minutes.
Granola can be stored in an airtight container for up to a month. Place the cream and granola in a bowl and add some fresh fruit and/or nuts on top.
