Pizza Margherita – recipe like the Italians




  1. For the pizza dough, put the flour in a bowl and make a well in it. Pour the crumbled yeast, sugar and 4 tablespoons of lukewarm water into the well, stir gently and leave to rise in a warm place for about 20 minutes.

  2. Add 1 t salt, 1 tbsp oil and 120 ml lukewarm water and knead everything with the dough hook of the hand mixer or in the food processor until a smooth dough.

  3. Then knead the dough vigorously on a floured work surface for about 10 minutes, while also folding the dough on the work surface and stretching it slightly.

  4. Form the dough into a ball, spread with 1/2 tablespoon of oil, place in a bowl and leave covered in a warm place for at least 2 hours until the dough has doubled in volume. Knead the pizza dough vigorously again and divide into 4 portions. Roll out each portion in a thin flatbread on a little flour. Depending on the size, place 1-2 pizzas on baking sheets lined with parchment paper. Preheat the oven to 230° (convection 210°, gas point 5-6).

  5. Rinse the tomatoes, peel or blanch them with a vegetable peeler and remove. Quarter and core. Drain canned tomatoes. Slice the mozzarella. Cover the pizzas with tomatoes, salt and drizzle with 1 tbsp olive oil. Bake each pizza in the oven for about 15 minutes.

  6. Cover pizzas with mozzarella and bake for another 5 minutes. If necessary, drizzle some olive oil over the top and top with basil leaves.

By the way, the colors red, white and green are not found on this pizza by chance: the first Pizza Margherita was served to King Umberto I and his wife Margherita at the end of the 19th century and symbolizes the Italian national colors.

Pizza Margherita: the ingredients

For the Pizza Margherita to be a real treat, it pays to focus on the quality of the ingredients: use ripe tomatoes or high quality San Marzano canned tomatoes. Dried basil cannot replace the flavor of fresh. And: The Margherita pizza is best served with it buffalo mozzarella!
