The Italian version of an omelette

Frittata, omelet or tortilla – you’ve probably eaten one of these delicious dishes. Basically all stir fry that consists of beaten eggs. The difference is in the details. A French omelet is folded in half. Frittata and tortilla are served open. If ingredients other than eggs are used, such as bacon or vegetables, they are added directly to the egg mass in the Italian (and Spanish) version. The omelette is filled before it is folded.
Despite all the subtle differences, there is one thing in common: whether hot or cold, whether for breakfast or dinner: all delicacies fill you up, are quick and easy to prepare and taste delicious.

This is how it is done:

You only need a few ingredients:

  • 8 eggs
  • 200 ml whipped cream or milk
  • 1 tsp salt
  • 0.5 tsp pepper
  • 1 pinch of sweet paprika powder
  • 100g Pecorino cheese, grated
  • 20 ml of cooking oil
  • 1 clove garlic, chopped
  • 150 g courgette, sliced
  • 100 g date tomatoes, halved
  • toppings:
  • arugula
  • pecorino

The preparation is not difficult:

  1. Preheat the oven to 180°C for a circulating air.
  2. Whisk together the eggs, cream, spices and pecorino in a bowl.
  3. Heat cooking oil in an ovenproof pan. Sauté garlic in it until fragrant. Add egg mixture. Sprinkle zucchini and tomatoes on top. Fry for 5 minutes on low to medium heat until the egg mixture starts to set.
  4. Bake for 10 minutes until the frittata is completely set.
  5. Sprinkle with arugula and pecorino, if desired.
  6. Nice!
