Bake a plum semolina cake! It’s easy to do with this delicious recipe

When you think of plum cake, you usually think of the classic plum cake, i.e. the sheet cake with yeast dough. Also called “Datschi” for short in southern Germany – comes from “detschen”, which means to press the plums into the dough.

We don’t have a plum datchi for you here, but an equally delicious plum cake recipe in which the fruit is not “put in”. And where the dough is made with semolina. With which the cake can also be served as a dessert. The plum semolina cake succeeds very easily. Try it – and enjoy baking!

Easy recipe for plum semolina cake

For the plum semolina cake you need: 500 grams of prunes (or prunes), 1 lemon (organic), 500 milliliters of milk, 140 grams of fine sugar, 1 packet of vanilla sugar, 100 grams of semolina, 3 eggs (size M), 1 pinch of salt, 70 grams of butter, 100 grams of ground almonds , icing sugar for dusting, a springform pan (diameter 26 centimetres), baking paper

This is how it works: First wash the plums, pit them and cut them into pieces. Wash the lemon well, dry it and finely grate the peel.

Pour the milk into a saucepan, add the sugar and vanilla sugar and bring to the boil. Remove the pan from the heat and gradually stir in the semolina so that no lumps form. Bring to the boil again and then let it swell a bit. Stir every now and then. (Exactly, everything like cooking semolina.)

Separate the eggs and beat the egg whites with salt until stiff. Mix the butter, egg yolks, almonds and lemon zest one after the other and quickly into the still warm semolina. Then fold in the whipped cream. Finally, fold in the plums and pour the mixture into the springform pan lined with baking paper.

Bake in a preheated oven at 180 degrees (160 degrees fan oven) for about 45 to 50 minutes. Allow the cake to cool slightly, remove from the mold and refrigerate. Dust generously with powdered sugar before serving.
